Binney and Tremaine

Excellent companion volume to Binney and Merrifield. Since this course will not cover dynamics in detail, we will use this sparingly.
Extragalactic Astronomy and Cosmology: An Introduction
Springer, 2010

Schneider

Excellent textbook that covers many of the topics in this course. If you have time to read only one textbook for this course, let it be this one.

A classic text. For our purposes, it forms an excellent introduction to basic concepts in galaxy formation.

An excellent modern text presenting our current understanding of this subject from the theoretical perspective.
